Potato and Fava Soup

A warm, soothing soup for chilly January weekends. My own recipe!

Potato and Fava Soup

1 cup fava beans
6-8 small colored potatoes (Trader Joe multi-color pack works well)
6-8 cups chicken stock or stock/water combination
1 cup cooked ground sausage (optional)
thyme, bay leaf, salt, pepper
3 tbsp butter
1/2 cup grated Parmesan or Romano cheese

Rinse and sort beans. Boil in stock, on high, for 15-20 minutes, skimming off foam if it occurs. Reduce heat. Add washed, cubed potatoes, sausage if using, and a teaspoon of thyme and one or two bay leaves. Simmer on low for two hours (or put in crockpot and simmer on high 2+ hours). Remove from heat, and remove bay leaves. Add one cup slightly cooled stock, potatoes, and beans to a blender (avoid the sausage if possible) and puree. Add puree back to pot. Add butter and cheese, stir until melted. Season with salt and pepper to taste. Serve with warm sourdough bread.
